[Recipe] Colourful Oreo Cheesecake Truffles

It's baking time!
(no oven is required though)

Youngest sister was gonna have a graduation event in her secondary school.
And she wanted to make some truffles for her friends.
So another sister and I, being two helpful older sisters, gave her a helping hand!

Ingredients for Oreo Cheesecake Truffle

2pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2pkg. (15.5 oz.) OREO Cookies, finely crushed, divided
3pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate, melted
1pkg (100g) HAPPY FAMILY Colour Ball

Enough to make around 80 Colourful OREO cheesecake Truffles :)
Here are the steps!

1) Seperate the OREO cookies from the cream

2) Crush the OREO cookie into bits
You can put all the cookies into a bag then smash them.
Alternatively, what we did will to use a blender/grinder/whatever you call it.

3) Prepare the cheesecake
Mix cream cheese and 3 cups cookie crumbs until well blended.

4) Roll the OREO cheesecake balls
Make the OREO cheesecake into small little balls and cover it with a layer of OREO cookie crumbs.

5) Freeze the OREO cheesecake balls
Place all the OREO cheesecake balls into the fridge and leave it inside for about an hour 
or until it firms. Store in a tightly covered container.


While waiting for the OREO cheesecake balls to harden, continue with step 6.

6) Melt the chocolate
Place the chocolate in a metal/heat resistant bowl and place it over a pot of boiling water. Make sure that the water does not touch the bowl that is holding the chocolate. Then keep stirring every few minutes. This will take awhile. But should be ready by the time the OREO cheesecake balls harden.

Tip:
If you are melting the chocolate using the bowl over boiling water method,
make sure to use a small fire and let the chocolate melt very slowly!
That's the only way to get really liquid chocolate. Else it will look thick like ours :(


An alternative way (if you have microwave) would be to place unwrapped chocolate squares in microwaveable bowl. Microwave on HIGH 2-1/2 min. or until chocolate is completely melted, stirring every 30 sec. Then you do not need to start melting immediately. Can microwave when the 1hour hardening time is up so the chocolate won't harden when you need it.


7) Dip the OREO cheesecake balls into the hot liquid chocolate and sprinkle colourful balls
To easily coat truffles with the melted chocolate, add truffles, in batches, to bowl of melted chocolate. Use 2 forks to roll truffles in chocolate until evenly coated. Remove truffles with forks, letting excess chocolate drip back into bowl. Place truffles on prepared baking sheet and sprinkle colourful balls over it (before the chocolate layer hardens). We didn't have proper baking sheets so we used aluminium foils instead.

Tip: 
Make sure to be fast and dip one ball at a time. You don't want to throw all in.
Cause the cheesecake balls will melt in the hot chocolate.

8) Leave the OREO cheesecake truffles in the fridge till it hardens
And it's ready to eat!
Not that that pretty cause they weren't really ball shape (we melted the choco too quickly).
But nonetheless it's a good first attempt. Yes? ;)

There is a reason why I say KateLyn(n)s.
As you all know, I've named myself Katelyn a year plus ago.
One of my sis all of a sudden decided to name herself Kate.
Then she remembered that I'm called Katelyn BUT she still wanted that name.
And she tried psycho-ing the youngest sis to name herself Lynn.
So together they will be Kate+Lynn=Katelyn
Youngest sis didn't want to be called Lynn though (thank god)
And I'm still very much against the Kate+Lynn idea! :(
